Zucchini and Parmesan Fritters

What do you do if you accidentally shred too much zucchini for your Chocolate and Zucchini Brownies?  Check out the recipe for the Broccoli Fritters I made recently and substitute zucchini, done. This time around I served them with a dollop of sour cream mixed with a squirt of lemon juice.  Delicious.  Zucchini Week LIVES ON!  Zucchini.

we've been away from our garden for a week now. i know when we get home we'll have zucchini like these waiting for me! love the cupcakes idea! i'll send you what i come up with. just came across your blog this morning. so fun! will definitely be back.

Made these tonight for a side dish and my taste buds were dancing! I only did two things different. First laid out the shredded zucchini with a touch of salt on paper towels to sweat it out a little. Secondly, swapped out the red pepper flakes for Old Bay! I have a love affair with Old Bay. Thanks for sharing!
