Chocolate Chip Banana Snack Cake

Hello!  It's me.  I'm tired.  If I stop making sense somewhere in this post, chalk it up to no sleep and too much coffee...


I have some business to take care of first, and I'm going to use numbers like a Type A freak...

With both of my childbirth experiences, I've come home from the hospital and all I can think about are the nurses who took care of me while I was there.  Honestly, when I come back in another life as a better person, I will come back as a Labor & Delivery RN.  Unless karma is a real thing because then I'll probably come back as a piece of chewed gum.  Anyway, those nurses are angels, catering to you in your most humble, most vulnerable, most joyful life moment.  So after giving birth to both of my babies, I brought baked goods to the hospital as a small token of thanks.

After giving birth to Etta, I found this recipe but added 3 ripe bananas to the wet ingredients.  I also used mini chocolate chips in the batter.  It was stupid good.  Moist, messy, full of chocolate and banana flavor - I want more right now.

I know what you mean--my labor and delivery nurses were phenomonal! So kind of you to think of them. And this cake? Yeah, it looks crazy good--love how moist the bananas make it!

My colleagues are going to hate me tomorrow! I was just trying to find a fun recipe w ripe bananas (I have 6 to use!) And then you posted this..cake is in the oven! Hope your first 2 weeks of having KIDS has been treating you well!

This recipe looks SO moist and amazing! What do you think about adding shredded coconut, or is that too many flavors going on? (Also, welcome back! Loved your guest posts, but super glad you're back. Congratulations!)

Delish - I made it yesterday and the husband finished it last night. Genius adding the bananas!

I made this today, my husband ate it and didn't say anything. I asked him what he thought and he said, "I didn't think you'd have to ask, isn't it obvious?"
And honestly I keep going to the pan and slicing off a bite. So yes, it's obvious.

That cake looks amazing. Also- my Mama is a Labor & Delivery nurse. But I doubt her patients are as thoughtful as you :)
